Salted Caramel Oreo Icebox Cake

Description

It doesn't have to be hot outside to enjoy this delicious icebox cake. It's quick and simple to prepare and will be enjoyed by all, even those not too crazy about coffee. Believe it or not, there is no ice cream in this wonderful dessert.

Ingredients

8 oz. package cream cheese, softened
1/2 c. caramel ice cream topping
1/2 t. coarse ground sea salt
32 Oreo cookies
6 oz. strongly brewed coffee, cooled
16 oz. container Cool Whip, thawed and divided
caramel syrup
chocolate syrup
coarsely ground sea salt, for garnish

Caramel Cheesecake Mixture:
Beat together cream cheese, caramel topping and sea salt until creamy; fold in 2 c. Cool Whip.

Dip 16 Oreo cookies in cooled coffee; place in the bottom of an 8 x 8 pan.

Spread half of the caramel cheesecake mixture over the Oreo cookies; repeat the layers with remaining cookies and caramel cheesecake mixture. Spread 1 c. Cool Whip over the top. Refrigerate until set.

Top with remaining Cool Whip, caramel and chocolate syrups, and more sea salt, if desired.

16 servings.

Store in the refrigerator in a tightly sealed container.
