Magic Cookie Truffles

Description
Now you can have a version of Magic Cookie Bar treats and make them into wonderful truffles. No cooking is necessary, just a bit of melting the chocolate in the microwave and combining it with coconut, sweetened condensed milk and graham crackers.
Ingredients
1 c. chopped pecans, toasted
1 c. powdered sugar
2 1/2 c. coconut
1/2 c. graham cracker crumbs
1/2 c. butter, melted and cooled slightly
14 oz. can sweetened condensed milk
1/2 c. mini chocolate chips
16 oz. chocolate almond bark, divided
2 T. solid vegetable shortening
cooking spray, for hands

Preheat oven to 350 degrees. Line several large sheet pans with parchment or wax paper.
Toast pecans on a baking sheet for 7-9 minutes; remove from oven; let cool slightly. Chop pecans very finely.
In a bowl, mix powdered sugar, coconut, graham cracker crumbs and pecans until well combined. Add in butter and sweetened condensed milk; stir until well combined. Stir in chocolate chips.
Spray hands with cooking spray as often as needed and rinsing hands halfway through to prevent sticking; roll mixture into about 36 one inch balls; place on prepared sheet pans; repeat. Freeze balls until firm.
Once the balls have firmed up, begin melting the chocolate. Place 8 oz. almond bark in a microwavable bowl; heat for 45 seconds; stir; heat 25 seconds more; stir. Add 1 T. solid shortening; heat 25 seconds more; stir. If necessary, heat another 20 seconds or so just until shortening is starting to melt. Stirring a little helps it to melt.
Take about a 12 balls out of the freezer. Begin dipping balls into chocolate with a fork to coat evenly; place on prepared pans. Repeat with remaining truffles.
When out of chocolate, rinse and dry the bowl, and repeat melting the remaining almond bark and 1 T. solid shortening.
Drizzle remaining chocolate with a fork onto finished truffles for a decorative touch, if desired.
Makes about 36.
