Description
This is an incredibly quick and easy side dish to prepare. It's a great alternative to coleslaw or salad for any meal.
Ingredients
- 4 c. shredded carrots, from about 6 large carrots
- 1/2 c. mayonnaise
- 1/3 c. sour cream
- 1 T. cider vinegar
- 1 c. golden raisins
- 8 oz. canned crushed pineapple, lightly drained
- salt and pepper, to taste
Steps
- Combine all ingredients in a bowl; mix well.
- Refrigerate for at least 1 hour before serving.
- 8 servings.
