This is an incredibly quick and easy side dish to prepare. It's a great alternative to coleslaw or salad for any meal.
Ingredients
4 c. shredded carrots, from about 6 large carrots
1/2 c. mayonnaise
1/3 c. sour cream
1 T. cider vinegar
1 c. golden raisins
8 oz. canned crushed pineapple, lightly drained
salt and pepper, to taste
