These homemade cheese toasts are perfect as an appetizer or with a salad, soup or a pasta dish. They are simple to make and will definitely be a big hit.
¼ c. olive oil
2 garlic cloves
½ baguette, thinly sliced, cut into 20 slices or 1/2 lb. day old country style bread, cut into 1/4 in. slices
Kosher salt
freshly ground black pepper
1/2 c. freshly grated Parmesan or Parmigiano - Reggiano cheese
Preheat oven to 350 degrees.
Using a blender, food processor or immersion blender, blend oil and garlic until smooth. There still might be tiny bits of garlic in the mixture.
Slice bread into thin slices; place on a baking tray; brush one side of the sliced with garlic oil; season with salt and pepper.
Using a fine grater, generously grate cheese on top of the oiled bread.
Place in the oven. Bake for 13-20 minutes or until golden brown and crisp.
Serve warm.
6-8 servings.
