This will become one of your favorite go to dessert recipes. You will get all kinds of compliments when you serve it and no one will believe that the crust is made with saltine crackers.
Crust:
3 egg whites
1/2 t. cream of tartar
1 t. vanilla
1 c. sugar
1 c. crushed saltine soda crackers
1/3 c. chopped nuts
2 pkg. Dream Whip, divided
1/2 c. sugar
4 T. coconut
2 cans cherry pie filling
Preheat oven to 350 degrees. Grease a rimmed cookie sheet.
Beat egg whites and cream of tartar together until stiff. Add vanilla and 1 c. sugar; beat until very stiff; fold in crushed soda crackers and chopped nuts. Spread out evenly on the cookie sheet. Bake for 25 minutes. Remove from oven. Let cool for about 1 hour.
Beat 1 pkg. Dream Whip with 1/4 c. sugar; spread on the cold crust. Add coconut and cherry pie filling. Cover with another pkg. of Dream Whip that has been mixed with 1/4 c. sugar.
Chill for 3-4 hours.
*Don't prepare this too far in advance though, or the crust will become soggy.
