Description
Everyone will love these super delicious, moist and not overly sweet cookies. They taste just like the classic carrot cake that is loved by all.
Ingredients
- Cookies:
- 1 c. butter, softened
- 3/4 c. sugar
- 3/4 c. firmly packed brown sugar
- 2 large eggs
- 2 t. vanilla
- 2 1/2 c. all-purpose flour
- 1 t. baking soda
- 2 t. ground cinnamon
- 1/2 t. salt
- 4 medium (2 c.) carrots, grated
- 1 c. finely chopped pecans
- Frosting:
- 4 c. powdered sugar
- 1/2 c. butter, softened
- 8 oz. package cream cheese, softened
- 1/2 t. vanilla
- green food color, if desired
- orange food color, if desired
Steps
- Preheat oven to 350°F. Grease cookie sheets.
- Carrots:
- Lay 2-3 sheets of thick paper towel on the counter. Place the grated carrots on one half of the paper towels. Fold the other side of the paper towels on top and press firmly to squeeze as much water from the carrots as possible.
