Carrot Cake Cookies

Description

Everyone will love these super delicious, moist and not overly sweet cookies. They taste just like the classic carrot cake that is loved by all.

Ingredients

Cookies:
1 c. butter, softened
3/4 c. sugar
3/4 c. firmly packed brown sugar
2 large eggs
2 t. vanilla
2 1/2 c. all-purpose flour
1 t. baking soda
2 t. ground cinnamon
1/2 t. salt
4 medium (2 c.) carrots, grated
1 c. finely chopped pecans

Frosting:
4 c. powdered sugar
1/2 c. butter, softened
8 oz. package cream cheese, softened
1/2 t. vanilla
green food color, if desired
orange food color, if desired

Preheat oven to 350°F. Grease cookie sheets.

Carrots:
Lay 2-3 sheets of thick paper towel on the counter. Place the grated carrots on one half of the paper towels. Fold the other side of the paper towels on top and press firmly to squeeze as much water from the carrots as possible.

Cookies:
Combine butter, sugar and brown sugar in a bowl; beat at medium speed, scraping bowl often, until creamy. Add eggs and 2 t. vanilla; beat until well mixed. Add flour, baking soda, cinnamon and salt; beat at low speed, scraping bowl often, until well mixed. Stir in carrots and pecans. Place batter in the refrigerator for about 1 hour.

Drop dough by rounded tablespoonfuls onto cookie sheets, leaving room for cookies to spread. Bake 11-15 minutes or until lightly browned around edges. Cool completely.

Frosting:
Combine powdered sugar, butter, cream cheese and vanilla in bowl; beat at medium speed until smooth and creamy. Reserve and set aside 1/2 cup frosting, if making carrot designs on top of cookies.

Frost each cooled cookie with 2 t. frosting.

If making carrot designs on cookies, divide reserved frosting in half; tint one half green and the other half orange. Spoon each tinted frosting into resealable plastic food bags; snip off corner of bags. Make carrot design on top of each cookie, if desired.

42 cookies.

*You could also decorate them for different holidays and seasons if you want, like wreaths or Christmas trees or hearts for Valentine's Day.
