Maggie's Artichoke Cheese Squares

Description

This appetizer will be your go to recipe to make because it's so easy and delicious. It's an economical appetizer to serve a crowd.

Ingredients

12 oz. jarred marinated artichoke hearts
1 small onion, finely chopped
4 eggs, beaten
6 saltine crackers, finely crushed
8 oz. mild or sharp Cheddar cheese, shredded
dash Tabasco sauce
salt and pepper, to taste

Preheat oven to 325 degrees. Grease an 8x8 inch baking pan.

Drain artichokes, reserving 2 T. marinade.

Chop artichoke hearts; set aside. Saute chopped onion in reserved marinade until soft; drain; set aside.

Combine onion, artichokes, eggs, crushed crackers, Tabasco sauce, cheese, salt and pepper in a bowl, stirring after adding each ingredient. Pour into prepared baking pan.

Bake for 35 - 40 minutes or until heated through and slightly bubbly on the top.

Serve warm.
