Anytime is a good time to make these pretty Italian cookies, but the holidays make them even more special.
2 c. flour
1 c. sugar
1 c. ricotta cheese
3 egg yolks
3 whipped egg whites
1 t. baking powder
1/2 c. softened butter
pinch of salt
cherry jam
powdered sugar
Line cookie sheets with parchment paper.
In a bowl, put sugar and ricotta cheese; add egg yolks, butter, flour and baking powder; add egg whites and a pinch of salt; stir well.
Make cookies with a hole in the center, placing cookies on the prepared cookie sheet. Let cookies stand for 30 minutes.
When standing time is almost up, preheat oven to 350 degrees.
Bake for about 30 minutes.
Sprinkle with powdered sugar and garnish with cherry jam.
Serve.
