This drink will be a hit at a Christmas party. It could be served on the rocks, just omit the blender step and pour it into a large beverage dispenser. Rimming the glasses with sugar/salt and garnishing with mint and cranberries make it very festive.
1/2 c. whole cranberries
1/4 c. granulated sugar, divided
2 T. kosher salt
1 wedge lime, for rimming
2 c. cranberry juice
12 oz. silver tequila
8 oz. triple sec
1/2 c. plus 1 T. freshly squeezed lime juice, divided
12 c. ice
sprigs of mint, for garnish
In a medium bowl, toss cranberries with 1 T. lime juice; drain and discard the lime juice; toss cranberries with 2 T. sugar. Spread out onto a baking sheet to dry.
On a shallow plate, combine the remaining sugar with salt; stir to combine.
Using the lime wedge, wet the rim of 8 glasses; dip in sugar/salt mixture.
Combine cranberry juice, tequila, triple sec, remaining 1/2 c. lime juice and ice in a large blender, working in batches, if necessary. Blend until smooth.
Pour into prepared glasses. Garnish with a sprig of mint and several sugared cranberries.
Makes 8 cocktails.
