White Christmas Mojito

Coconut lovers, you will absolutely love this cocktail! It's a creamy cocktail that's full of coconut, mint and lime flavors that will put everyone in the holiday mood.
Ingredients
1 c. freshly squeezed lime juice
1/4 c. fresh mint leaves
1/4 c. sugar
1/2 c. white rum
1/2 c. coconut rum
1 c. canned coconut milk
ice
sparkling water
pomegranate seeds and mint leaves, for garnish

In a large pitcher, muddle the mint leaves, lime juice and sugar just until the leaves have broken down a bit.
In a blender, combine white rum, coconut rum and coconut milk; pulse until smooth. Pour over the mint/lime sugar mixture; stir to combine.
Chill until ready to serve.
To serve, place ice in glasses; fill glasses halfway with the mojito mix; top with sparkling water; stir; garnish with mint leaves and pomegranate seeds.
