It's always a treat to enjoy a lava cake at a restaurant, but you can make your own at home with this Pampered Chef recipe using either the Round Covered Baker or the Deep Covered Baker in your microwave.
2/3 c. sweetened flaked coconut
2 t. canola oil
1/4 c. pecans, chopped
14 oz. can sweetened condensed milk, divided
1 2/3 c. devil’s food cake mix from a box
1/3 c. sour cream
1 egg
1/4 c. semi-sweet chocolate morsels
Microwave coconut in uncovered in the Pampered Chef's Round Covered Baker on High 2-3 minutes or until golden brown, stirring every 30 seconds; spread over a piece of parchment paper; cool.
Brush baker with oil.
Mix pecans, half of the coconut and 1 c. condensed milk in a bowl until blended.
Mix cake mix, sour cream, remaining condensed milk and egg in a bowl until blended. Pour batter into prepared baker. Pour coconut mixture evenly over batter.
Microwave, uncovered, on HIGH 3-5 minutes or until center of cake looks moist, but not wet. Cover; let stand 5 minutes.
Microwave chocolate in uncovered in a bowl on HIGH 45-60 seconds or until almost melted; stir until smooth.
Pour melted chocolate into a resealable bag; trim corner; drizzle with chocolate; sprinkle cake with remaining coconut.
8 servings.
*This recipe can be doubled making 16 servings using the Pampered Chef's Deep Covered Baker. Start with a regular size package of devil's food cake mix; double remaining ingredients. Prepare as recipe directs and microwave, uncovered, for 8-10 minutes.
