No time or energy to bake cookies? No problem! Make these quick and easy little gems that is reminiscent of pecan pie and yummy pralines.
2 sleeves (about 20) honey graham crackers
1 c. (2 sticks) butter
1 c. brown sugar
1 t. vanilla extract
1 1/2 c. chopped pecans

Preheat oven to 350 degrees. Line a rimmed baking sheet with aluminum foil; mist with cooking spray.
Place graham crackers in one layer on the baking sheet, breaking them apart as necessary to fill in all gaps. Set aside.
In a medium saucepan, mix together butter and brown sugar; bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Stir in vanilla extract and chopped pecans. Evenly pour the hot mixture over the graham cracker sheets, working quickly, using a spoon or offset spatula to spread the mixture around to evenly coat the graham crackers.
Bake for about 10 minutes or until mixture is bubbly. Allow bark to cool to room temperature before breaking into pieces.
Store leftovers in an airtight container.
8-10 servings.
