Ice box pies go by that name because they are stored in the refrigerator/ice box. This easy, delicious dessert pairs a store bought chocolate graham cracker crust with orange flavors, which go so well together.
9 inch prepared chocolate graham cracker crust
4 egg yolks
14 oz. can sweetened condensed milk
1/4 c. orange juice
1/4 c. freshly squeezed lemon juice
1 T. citrus zest
1/2 t. orange extract
1 c. heavy cream
2 T. granulated sugar
1/2 t. orange extract
Preheat oven to 350 degrees. Be sure that there is a rack on the lowest position in the oven.
Whisk egg yolks in a medium bowl until smooth; add sweetened condensed milk, orange juice, lemon juice, zest and extract; stir until smooth; pour into crust.
Bake on the lowest rack until center of pie is just set, 15 - 20 minutes. Remove from the oven; let cool for 1 hour. Refrigerate for 1 hour until chilled.
Meanwhile, make the whipped cream. To a stand mixer fitted with the whisk attachment, add cream and sugar; mix on medium until thick and you see the edges of the whisk as it moves though the cream, about 3-5 minutes. Stir in the extract.
Store in the refrigerator until ready to serve.
Serve, garnished with an orange slice.
