Ingredients
- 2 - 15 1/4 oz. cans whole kernel corn, drained
- 2 - 15 oz. cans black beans, rinsed and drained
- 8 plum tomatoes, seeded and chopped
- 1 medium red onion, chopped
- 3/4 c. minced fresh cilantro
- 4 jalapeno peppers, seeded and chopped*
- 1/4 c. freshly squeezed lime juice
- 1/2 t. salt
- tortilla chips, for serving
Steps
- In a very large bowl, combine the first 8 ingredients; cover; refrigerate until ready to serve.
- Serve with tortilla chips.
- Makes 11 cups.
