Description

This beautiful cocktail makes a wonderful Christmas or winter cocktail. It only takes about 5 minutes and a few ingredients to prepare it.

Ingredients

• crushed ice
• 1 c. pineapple juice
• 1/2 c. Blue Curacao liqueur
• 1/2 c. light rum or vodka
• 1/2 c. cream of coconut
• TO RIM GLASSES:
• light corn syrup
• flaked coconut

Steps

1. For Rimming the Glasses:
2. Pour a small layer of corn syrup onto a shallow plate; pour some coconut into a small dish. Dip each of 2 cocktail glasses into the light corn syrup, then in coconut flakes.
3. In a blender filled with crushed ice, combine pineapple juice, Blue Curacao liqueur, rum (or vodka), and cream of coconut; blend until smooth.
