This beautiful cocktail makes a wonderful Christmas or winter cocktail. It only takes about 5 minutes and a few ingredients to prepare it.
crushed ice
1 c. pineapple juice
1/2 c. Blue Curacao liqueur
1/2 c. light rum or vodka
1/2 c. cream of coconut
TO RIM GLASSES:
light corn syrup
flaked coconut
For Rimming the Glasses:
Pour a small layer of corn syrup onto a shallow plate; pour some coconut into a small dish. Dip each of 2 cocktail glasses into the light corn syrup, then in coconut flakes.
In a blender filled with crushed ice, combine pineapple juice, Blue Curacao liqueur, rum (or vodka), and cream of coconut; blend until smooth.
Pour mixture evenly into prepared cocktail glasses.
Serve immediately.
2 cocktails.
*You can make this drink non-alcoholic by eliminating the rum and using a blue curacao syrup in place of the blue curacao.
