Homemade Olive Garden Salad and Dressing

Dressing:
1/2 c. mayonnaise
1/3 c. red wine vinegar
1/3 c. lemon juice from about 1 lemon
1 T. extra-virgin olive oil
1 t. dried parsley
1 t. dried basil
1/2 t. dried oregano
1/2 t. garlic powder
1/4 t. salt
2 T. grated Parmesan cheese, optional
Salad:
4-6 c. chopped Romaine lettuce
half of a small red onion, sliced into rings
1 large tomato, halved and sliced
8 whole pepperoncinis, drained
1/3 c. pitted kalamata olives
1/2 c. croutons
freshly grated Parmesan cheese
freshly ground black pepper

Dressing:
In a small bowl, whisk together mayonnaise, vinegar, lemon juice, olive oil, parsley, basil, oregano, garlic powder, salt, and Parmesan cheese.
Pour into an airtight container. Store in the refrigerator for up to 4 weeks.
Salad:
To a large bowl, add lettuce, onion, tomato, pepperoncinis, olives; garnish with croutons, cheese. Serve with freshly ground black pepper.
