Ingredients
- Dressing:
- 1/2 c. mayonnaise
- 1/3 c. red wine vinegar
- 1/3 c. lemon juice from about 1 lemon
- 1 T. extra-virgin olive oil
- 1 t. dried parsley
- 1 t. dried basil
- 1/2 t. dried oregano
- 1/2 t. garlic powder
- 1/4 t. salt
- 2 T. grated Parmesan cheese, optional
- Salad:
- 4-6 c. chopped Romaine lettuce
- half of a small red onion, sliced into rings
- 1 large tomato, halved and sliced
- 8 whole pepperoncinis, drained
- 1/3 c. pitted kalamata olives
- 1/2 c. croutons
- freshly grated Parmesan cheese
- freshly ground black pepper
Steps
- Dressing:
- In a small bowl, whisk together mayonnaise, vinegar, lemon juice, olive oil, parsley, basil, oregano, garlic powder, salt, and Parmesan cheese.
- Pour into an airtight container. Store in the refrigerator for up to 4 weeks.
