This cake has also been called Depression Cake or Wacky Cake. It's prepared without eggs, butter or milk as well as no mixer. It's a great dessert for people with egg or milk allergies and would be fun to do with kids.
1 1/2 c. all-purpose flour
3 T. unsweetened cocoa
1 c. granulated sugar
1 t. baking soda
1/2 t. salt
1 t. white vinegar
1 t. vanilla extract
5 T. vegetable oil
1 c. water
Preheat oven to 350 degrees. Grease an 8x8 inch baking pan.
Mix first five dry ingredients together in a bowl; pour into the prepared baking pan. Make three depressions in the dry ingredients, two small ones and one larger one. Pour vegetable oil into the larger depression; pour vinegar into a small one; depression; pour vanilla the last one. Pour water over all. Mix well until smooth.
Bake on middle rack of the oven for 35 minutes. Check with a wooden toothpick to make sure that it comes out clean. Cool. Top with your favorite frosting or dust with powdered sugar.
