Whether you use left-over mashed potatoes or prepare them just for these potato patties, you'll love this great side dish. They are super creamy on the inside and nice and crispy on the outside.
2 c. prepared mashed potatoes
1-2 eggs, beaten
1 small onion, finely minced
1/4 -1/2 t. salt
1/4 t. black pepper
2 1/2 T. olive oil
Combine mashed potatoes, beaten egg, onion, salt and pepper in a bowl; mix until blended, but do not over-mix.
Heat oil in a non-stick skillet over medium heat. When hot, add about 1/4 c. potato mixture in a patty shape, then flatten to about 1/2 inch thick.
Cook until bottom is brown and crispy; flip patty over; cook until brown and crispy. Transfer to a paper towel lined plate to drain. Repeat with remaining potato mixture.
Serve the patties hot with ketchup or sour cream or with nothing at all.
