Make yourself a healthy small meal in no time at all. It's done in 10 minutes. Just stuff an avocado with tuna, cilantro, jalapeno and bell pepper. Lunch is ready!
1 large avocado, halved and pitted
4.5 oz. can tuna, drained
¼ c. diced red bell pepper
1 T. minced jalapeno
1/4 c. cilantro leaves, roughly chopped
1 T. freshly squeezed lime juice
salt and pepper, to taste
Scoop out enough avocado from the pitted areas to widen the filling space; place the scooped out avocado into a medium-size mixing bowl; mash with a fork. Add tuna, bell pepper, jalapeno and cilantro to the bowl; pour lime juice over everything; stir until well mixed.
Divide the tuna mixture among each avocado. Season with salt and pepper, to taste.
