Get the taste of a Big Mac without all of the calories and fat. You will want to put this on your meal rotation.
Salad:
1 lb. 96% extra lean ground beef or 99% fat-free ground turkey
1 t. Worcestershire sauce
1/2 t. onion salt
1 t. minced garlic
1 large head Romaine or Iceberg lettuce, chopped
1 large tomato or 12 grape tomatoes, diced
1/2 small red or white onion, diced
1 c. light Cheddar cheese
12 dill pickles, diced
Dressing:*
2 T. light mayonnaise
2 T. non-fat Greek or plain yogurt
2 T. no sugar added ketchup
1/2 T. water
1 T. minced white onion
1 t. sugar
1 t. sweet pickle relish
1 t. white vinegar
dash salt
Spray a large skillet with non-stick cooking spray. Add the ground beef and onion salt; cook for about 5-7 minutes, stirring occasionally, crumbling the meat while cooking; discard any excess grease.
Add Worcestershire sauce and garlic; stir until garlic is incorporated. Cook meat until it's no longer be pink. Remove from heat; allow to cool.
Dressing Directions:
In a small bowl, whisk the mayonnaise, vinegar, non-fat or plain Greek yogurt, ketchup, salt, water, pickle relish, onion and sugar; place in the refrigerator for at least 30 minutes.
Assembly: For each serving, place 1/4 of the meat over the top of the lettuce, 1/4 c. cheese, add 1/4 of the tomatoes, 2 T. dressing; top with 1/4 of the diced pickles.
Make 4 servings.
*You can substitute the homemade salad dressing with a store bought Thousand Island dressing.
