This chocolate pie is just Heavenly. It uses chocolate chips instead of cocoa powder and the usual chocolate pie ingredients. Use a store bought pie crust or your favorite recipe.
1/2 t. salt
1 T. vanilla extract
2 c. Hershey's Special Dark Chocolate Chips from a 12 oz. pkg., divided (or semi-sweet)
4 egg yolks
1/3 c. cornstarch
2/3 c. sugar
3 c. milk
2 T. butter or margarine, softened
9 inch pie shell
sweetened whipped cream or whipped topping, optional
Bake pie shell according to the package directions; cool.
In a 2 qt. saucepan, stir together sugar, cornstarch and salt.
Combine egg yolks and milk in a container with a pouring spout. Gradually blend milk mixture into sugar mixture.
Cook over medium heat, stirring constantly, until mixture comes to a boil; boil and stir for 1 complete minute. Remove from heat; stir in butter and vanilla. Add 1 3/4 c. dark chocolate chips; keep stirring until chips are melted and mixture is well blended and any lumps disappear.
Pour into cooled pie shell; press plastic wrap onto filling; cool. Refrigerate several hours or until chilled and firm.
Garnish with whipped cream and remaining chocolate chips or shaved chocolate, if desired.
