This low-carb dish is full of flavor and makes a great appetizer, side dish or in a casserole.
1 large head cauliflower, cut into florets
1 T. extra-virgin olive oil
salt, to taste
1/4 t. freshly ground black pepper
1 T. garlic clove, minced
1 t. paprika
1/2 c. grated Parmesan cheese
fresh parsley, chopped
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
In a large bowl, add cauliflower florets, olive oil, salt, pepper, garlic and paprika; stir well to combine. Spread everything on the prepared baking sheet in a single layer.
Bake for 15 minutes. Stir the florets; sprinkle with the Parmesan cheese; bake 15 more minutes.
Garnish with fresh parsley. Serve as a side, as an appetizer or in a casserole.
