Salmon Tortilla Soup

Description

This healthy soup is easy and quick to prepare and can be ready in just a few minutes. It's a great dish to serve during Lent or for meatless meals.

Ingredients

15 oz. can whole kernel corn, drained
28-30 oz. canned chicken broth
2 - 5 oz. cans Chicken of the Sea® Skinless Boneless Pink Salmon
15 oz. can black beans, drained and rinsed
10 oz. can diced tomatoes with green chiles, drained
tortilla strips, optional
fresh cilantro, optional

Stir together corn, broth, salmon, beans and tomatoes in a large saucepan or stock pot. Simmer over medium heat until soup is heated through.

Serve, topped with tortilla strips and cilantro, if desired.
