Salmon Tortilla Soup

Description

This healthy soup is easy and quick to prepare and can be ready in just a few minutes. It's a great dish to serve during Lent or for meatless meals.

Ingredients

  • 15 oz. can whole kernel corn, drained
  • 28-30 oz. canned chicken broth
  • 2 - 5 oz. cans Chicken of the Sea® Skinless Boneless Pink Salmon
  • 15 oz. can black beans, drained and rinsed
  • 10 oz. can diced tomatoes with green chiles, drained
  • tortilla strips, optional
  • fresh cilantro, optional

Steps

  1. Stir together corn, broth, salmon, beans and tomatoes in a large saucepan or stock pot. Simmer over medium heat until soup is heated through.
  2. Serve, topped with tortilla strips and cilantro, if desired.
  3. 6-8 servings.
