Three Layer Cherry Coke Cake

Description

This beautiful cake is a southern staple. It's great at parties, picnics and get togethers. It's moist and fluffy and has a delicious cherry flavor.

Ingredients

Cake:
2 c. flour
2 c. sugar
3/4 c. cocoa powder
1 t. baking soda
½ t. baking powder
½ t. kosher salt
1 c. plus 3 T. Cherry Coke soda
½ c. canola oil
1 c. sour cream
2 large eggs
2 t. pure vanilla extract
¼ c. Maraschino cherry juice

Cherry Frosting:
3 c. unsalted butter, softened
6 c. powdered sugar
5 T. heavy whipping cream
1 t. cherry extract
¼ c. Maraschino cherry juice
2 drops pink gel food coloring
1 c. stemless Maraschino cherries, dried, cut in half
1 small jar Maraschino cherries with stems, for topping

Chocolate Ganache:
1 c. semi-sweet chocolate chips
1/2 c. heavy whipping cream

Preheat oven to 350 degrees. Spray 3 cake pans with non-stick cooking baking spray.

Using a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder and salt until combined.

In another large bowl, whisk together cherry coke, canola oil and sour cream until combined and smooth. Whisk in eggs, vanilla extract and maraschino cherry juice. Gradually pour in the wet ingredients into the dry ingredients; whisk until combined.

Divide batter into the 3 cake pans. Bake for 25-30 minutes or until a wooden toothpick comes out clean. Allow to cool completely.

Remove the cakes from pans; place onto cake boards. Using a cake leveler, remove domes of the cakes.

Frosting:
Using a standing mixer, cream together butter, vanilla, powdered sugar, Cherry extract, Maraschino cherry juice until creamy and stiff with peaks; add heavy whipping cream until combined. Scoop 1 c. frosting into a piping bag.

Building the Cake:
Place 1 cake layer on the cake board. Using an ice cream scooper, scoop out 4-6 scoops of frosting; smooth evenly on the cake layer; sprinkle about ¼ c. chopped cherries on top of the frosting; lightly push down. Place a second layer of cake on top; spread on more frosting; sprinkle ¼ c. cherries on top of the frosting. Place the last layer on top; frost cake with remaining frosting.

Chocolate Ganache:
Using a small pot, heat up heavy whipping cream until steaming.

While heavy whipping cream is heating up, place chocolate chips into a heat-proof bowl. Once heavy whipping cream is heated, pour over the chocolate chips. Allow to sit for 1 minute; whisk until smooth. Pour ganache into a squeeze bottle.

Pipe dollops of ganache over the edge of the cake. Pipe dollops of frosting onto the top of the cake. Place Maraschino cherries with stems into the dollops of frosting.

Serve.

8 -10 servings.
