Old School Chicken and Rice Casserole

Even picky eaters will love this chicken casserole. You'll love it because it's simple to prepare, can be on the table quickly, makes a ton and is made in one dish which makes clean up a snap.

Ingredients

1 rotisserie chicken or 4 c. cooked chopped chicken
cooking spray
10.75 oz. can cream of chicken soup, regular or reduced fat
10.75 oz. can cream of celery soup, regular or reduced fat (or cream of onion soup)
10.75 oz. can cream of mushroom soup, regular or reduced fat
1/2 t. onion powder
1/4 t. garlic powder
1/4 t. black pepper
1 c. water
1 c. milk, regular, low-fat or fat-free
2 c. instant rice, raw (Minute Rice)
3/4 c. grated Parmesan cheese, freshly grated or in a container

Preheat oven to 400 degrees. Lightly spray a 9 × 13 inch pan with cooking spray; set aside.

Remove and discard skin from rotisserie chicken; remove meat from bones; chop.

In a large bowl, combine chicken, cream of soups, onion and garlic powders, pepper, water, milk and raw rice. Pour into prepared pan. Top with Parmesan cheese.

Bake uncovered for 40 - 50 minutes.

8 servings.
