However you make your fresh green beans now, you need to try this recipe. It's easy, delicious and a healthy method to cook them.
1 1/2 lb. fresh green beans, ends trimmed
4 T. salted butter
1 t. salt
1/2 t. black pepper
Rinse green beans. Snap off and discard the ends. The green beans can be snapped into smaller pieces if desired.
Steam green beans until tender using one of these 4 methods:
1. Use a Steamer. Fill the base with several inches of water, add vegetables to the basket, put on the lid, heat the water until it steams, steam until veggies are done.
2. Use a Makeshift Steamer. Use a pot, a colander, and a lid. Put 1-2 inches of water in the pot and then put the colander over it. The colander should be able to fit over the pot without touching the water in the base. Cover with a lid. The lid doesn't have to fit perfectly, just as long as it traps most of the steam inside.
3. Use a Pan. This method isn't perfect, but it will work. Pick a saucepan that is big enough to fit all of the vegetables. Put a half inch of water in the bottom and bring it to a boil. Add in vegetables, put the lid on, and reduce heat to low so that it just simmers. The water will create enough steam to cook the vegetables, but the vegetables that touch the water might get a little soggy or overcooked.
4. Use a Microwave. Use a microwave-safe bowl and just a little bit of water in the bowl to cover the bottom. Cover the bowl with plastic wrap, poking several holes in it to let some steam escape. Microwave until done.
Heat a large skillet over medium-high heat; add butter and steamed green beans. Season with salt and pepper. Saute for 3 - 5 minutes.
Serve hot.
