Description
This keto-friendly chicken casserole will quickly become a family favorite. It can be on the table is about 30 minutes, so it's a great dish for those busy weeknight dinners.
Ingredients
- 1 1/2 lb. boneless, skinless chicken breasts
- 2 T. extra-virgin olive oil
- 1 packet Hidden Valley® Original Ranch® Seasoning, Salad Dressing and Recipe Mix
- 2 bell peppers, diced (any color)
- 6 slices bacon, cooked and chopped
- 4 oz. cream cheese
- ½ c. heavy cream
- 2 c. shredded Cheddar cheese, divided
Steps
- Preheat oven to 350 degrees.
- Cut chicken breasts into 1 inch cubes; transfer to a 2 quart baking dish.
- Dress chicken with olive oil and Ranch Seasoning Mix, tossing to coat. Top with chopped bell peppers and bacon.
