This keto-friendly chicken casserole will quickly become a family favorite. It can be on the table is about 30 minutes, so it's a great dish for those busy weeknight dinners.
1 1/2 lb. boneless, skinless chicken breasts
2 T. extra-virgin olive oil
1 packet Hidden Valley® Original Ranch® Seasoning, Salad Dressing and Recipe Mix
2 bell peppers, diced (any color)
6 slices bacon, cooked and chopped
4 oz. cream cheese
½ c. heavy cream
2 c. shredded Cheddar cheese, divided
Preheat oven to 350 degrees.
Cut chicken breasts into 1 inch cubes; transfer to a 2 quart baking dish.
Dress chicken with olive oil and Ranch Seasoning Mix, tossing to coat. Top with chopped bell peppers and bacon.
In a small saucepan, warm the cream cheese, heavy cream and of the half the Cheddar cheese over medium-low heat, whisking continuously until incorporated; evenly pour over the chicken; top with the remaining cheese.
Bake on the oven's middle rack for 20–22 minutes until chicken reaches an internal temperature of 165 degrees.
Cool slightly before serving.
