Although this is not what would be called a pretty cake, it makes up for that with its super richness, taste and moistness. Serve with with a scoop of your favorite ice cream.
1 box Dark Chocolate Fudge cake (or Milk Chocolate Fudge) mix plus oil, eggs and water as directed
8 oz. cream cheese, softened
1/2 c. butter, softened or melted
1/2 c. creamy peanut butter
1/2 - 1 t. vanilla extract
4 c. powdered sugar
1/2 c. chocolate chips
1 c. miniature Reese's peanut butter cups, unwrapped and cut in halves
Preheat oven to 350 degrees. Grease a 9 x 13 baking dish with non-stick cooking spray.
In a large bowl, mix together ingredients for chocolate fudge cake as directed on box.
Pour fudge cake batter into prepared baking dish; set aside.
In a separate bowl, mix together cream cheese, butter, peanut butter and vanilla until well mixed and smooth. Mix in powdered sugar, 1 cup at a time, beating until fully incorporated, until all 4 cups have been added.
Add scoopfuls of peanut butter mixture all over to cake batter. Sprinkle peanut butter cup halves and chocolate chips over the top.
Bake 45-50 minutes, checking the center for doneness after 45 minutes with a wooden toothpick. Let cool a few minutes.
Serve warm with a scoop of vanilla ice cream, if desired.
