Sometimes simple is best and these baked tomato slices are just that. Simple to make, quick and absolutely delicious. Serve as a side dish or even as an appetizer.
3 large, ripe beefsteak tomatoes
non-stick cooking spray
1 c. freshly shaved, good quality Parmesan cheese
1 T. dried basil
1 T. dried oregano
2 T. fresh Italian parsley, chopped
Preheat oven to 400 degrees. Spray a baking sheet with non-stick cooking spray.
Wash and then slice tomatoes into 1/4 inch slices; arrange on prepared baking sheet.
Top each tomato slice with cheese to cover the tops; sprinkle on basil and oregano.
Bake 10 minutes, or until cheese is melted and bubbly.
Top with fresh Italian parley.
Serve immediately.
Tastes great with fish, shrimp, or beef dishes as a side dish!
