In 30 minutes with just a few ingredients, you can put this economical dish on your dinner table. It's not only quick to make but it's full of wonderful flavor.
T. butter
4 oz. sliced baby bella mushrooms or white button mushrooms (about 1 1/3 c.)
1/8 t. salt
1/8 t. black pepper
2 c. beef broth
2 c. uncooked wide egg noodles
12 frozen fully cooked beef meatballs, thawed
1/3 c. sour cream
In a 2 quart saucepan, heat butter over medium-high heat; add mushrooms, salt and pepper; cook 3- 5 minutes, stirring frequently, until tender. Add broth, noodles and meatballs; heat to boiling; reduce heat to medium; simmer uncovered 9 - 11 minutes, stirring occasionally, until liquid is mostly absorbed. Remove from heat; let stand 5 minutes. Stir in sour cream;
Serve.
2 -3 servings.
