Cheddar Cheese Puffs

Description

These cheese puffs are light and airy and very savory. The little gems are so addictive, you may want to make 2 batches.

Ingredients

8 T. butter
1 c. water
1/2 t. salt
1 c. all-purpose flour
4 large eggs
1 c. grated sharp Cheddar cheese (4 oz.)
2 t. chopped fresh thyme or rosemary
freshly ground black pepper

Preheat oven to 425 degrees. Line a baking sheet with parchment paper or silicone mat.

In a medium sized saucepan, add water, butter and salt; bring to a boil over high heat.

Reduce heat to medium; add flour all at once; stir rapidly, The mixture will form a dough ball that will pull away from the sides of the pan. Use a wooden spoon to stir as the dough will be rather thick. Continue to cook for several minutes.

Remove pan from heat; let cool several minutes, stirring so that the dough cools more evenly. The dough should be warm, just not so hot that when you start adding eggs they cook as they hit the dough.

Add eggs 1 at a time, stirring after each addition until eggs are incorporated into dough. Do this in a mixer or by hand with a wooden spoon. The dough should become somewhat creamy.

Stir in cheese, thyme and a few grinds of black pepper.

Spoon out small balls, each about a heaping tablespoon of dough onto prepared baking sheet, with at least 1 inch separating balls.

Bake for 10 minutes; lower heat to 350 degrees; bake for another 15-20 minutes, until puffed up and lightly golden.

Serve warm.

Makes about 2 dozen.

Feel free to substitute your favorite cheese in place of the Cheddar cheese.
