You don't need to wait for the holidays to make this amazing pie. But, it is a wonderful one to bake for people who don't like pumpkin pie.
1/2 c. apple butter
2 large eggs
1/2 c. sugar
2 T. cornstarch
1 t. ground cinnamon
2 c. whole milk
9 inch deep pie crust, unbaked
Preheat oven to 350 degrees. Place unbaked pie crust on a cookie or baking sheet.
In a large mixing bowl, beat eggs until frothy; beat in sugar, cornstarch, cinnamon and apple butter until combined; whisk in milk until combined.
Pour mixture into pie crust.
Bake for 1 hour and 15 minutes or until the center is set.
Remove from oven; allow pie to cool completely. Refrigerate overnight.
Top with whipped cream and sprinkles of cinnamon.
Serve.
