These beautiful dessert bars will make everyone's mouth water and are the perfect summertime dessert.
Crust:
1/2 c. butter, at room temperature
1/4 c. sugar
1 1/2 c. flour
1/4 t. salt
Filling:
1/2 c. freshly squeezed lemon juice
2-3 t. lemon zest
3/4 c. chopped strawberries
1 1/4 c. sugar
4 large eggs
1/4 cup flour
1/2 t. baking powder
1/4 t. salt
powdered sugar
Preheat oven to 350 degrees. Line a 9 x 13 inch pan with aluminum foil or parchment paper; spray with cooking spray.
In a medium bowl, beat butter and sugar together until fluffy; add flour and salt; mix until a crumbly dough forms. Pat mixture into prepared pan, spreading into an even layer.
Bake 15 minutes, or until lightly golden around the edges.
While crust is baking, in a blender or food processor, combine lemon juice, lemon zest, strawberries and sugar; blend until smooth. Add eggs; blend until smooth. Add flour, baking powder and salt; blend until smooth.
Pour mixture onto the still hot crust; return to the oven. Bake 22-25 minutes, or until top looks dry and is just slightly golden. Remove from oven; let cool completely.
Serve, sprinkled with powdered sugar.
