This beautiful pie is a delicious one to serve on a hot day. It's easy and takes just a few minutes to prepare, but the most difficult part is waiting for the pie to finish in the refrigerator, so be sure to make it in advance.
1 c. semi-sweet chocolate chips
3 t. shortening
1 Oreo cookie pie crust (or 1 graham cracker crust)
8 oz. block cream cheese, softened
1/2 c. sugar
1/2 c. sour cream
1 t. vanilla
8 oz. tub Cool Whip
2 c. fresh strawberries, washed, hulled and halved
Combine chocolate chips and shortening; melt in the microwave for about 30 seconds; stir. If needed, microwave for another 15-20 seconds; stir until well combined. Pour about 3/4 of the mixture into the bottom of the crust. Set aside the remaining chocolate for the topping. Refrigerate until firm.
Beat together cream cheese, sugar, sour cream and vanilla until smooth. Fold in the Cool Whip.
Scoop the mixture into the crust; refrigerate overnight.
Arrange strawberries on top of the pie. Microwave remaining chocolate; drizzle over the top. Refrigerate again for about 1 hour before serving.
