This easy to prepare casserole is great anytime of year but is especially good on chilly days and can be on your table in less than an hour.
3 c. cooked, shredded chicken (rotisserie chicken works great)
1 c. sour cream
10.75 oz. can cream of chicken soup
1/2 c. melted butter, divided
2 t. Italian seasoning
1/2 t. salt
1/4 t. black pepper
1 c. shredded Colby Jack cheese
1 sleeve Ritz crackers, crushed
Preheat oven to 350 degrees. Grease a 3 qt. casserole dish with non-stick cooking spray; set aside.
Crush Ritz crackers carefully while still in its sleeve.
Add chicken, sour cream, soup and 1/4 c. melted butter to a bowl; add Italian seasoning, salt and pepper and shredded cheese; stir well.
Pour chicken mixture into prepared pan. Sprinkle crushed crackers over top of casserole; drizzle on remaining 1/4 c. melted butter.
Bake, uncovered for 25-30 minutes or until center is hot.
Serve hot.
