Treat family or guests to these delightful bite sized little gems. They make the perfect dessert for holidays, reunions or birthday parties.
10 Oreo cookies
2 T. melted butter
8 oz. cream cheese, softened
2 T. heavy whipping cream
1 egg
1/4 c. sugar
2 t. vanilla extract
1 c. cherry pie filling
Preheat oven to 325 degrees.
Place cookies in a zip lock bag; crush into fine crumbs; place in a bowl; add melted butter. Using a cookie scoop if possible, scoop about 1 T. crumb mixture into a mini-cheesecake pan with a removable bottom.
Place softened cream cheese in a mixing bowl; beat at medium speed until creamy. Add whipping cream; beat until combined, scraping down sides of the bowl, as needed. Add egg; beat until combined. While mixer is still running, slowly add sugar until combined. Add vanilla: beat 1 minute. Scrape down sides of the bowl: beat 30 seconds.
Scoop into mini-cheesecake pan wells about 3/4 full.
Bake for 25 minutes or until center of cheesecakes are set.
Allow to cool; top with cherry pie filling. Chill for at least 1 hour.
Serve.
