Homemade Apple Fritters

Description

Apple picking time is now just around the corner and you'll want to have some good recipes on hand. This one is going to be a new favorite. These little pillows of goodness are easy to make and can be ready in 30 minutes.

Ingredients

Apple Fritter:
1 c. all purpose flour
½ t. ground cinnamon
½ t. salt
2 t. baking powder
2 t. freshly squeezed lemon juice
3-4 c. Honeycrisp or Granny Smith apples, diced from 2 large apples, peeled and diced into bite-size pieces
2 T. granulated sugar
2 large eggs, at room temperature
¼ c. whole milk
vegetable oil, for frying

Glaze:
1 1/4 c. powdered sugar
¼ t. vanilla extract
3-5 t. water

Fritters:
Whisk together flour, baking powder, cinnamon, and salt in a medium bowl.

In another bowl, add diced apples and lemon juice.

Add sugar and eggs to the bowl of a stand mixer; with the paddle attachment, mix on medium speed until fully combined; reduce to low; add in flour mixture; mix until just combined. Add milk; stir until well combined; fold in the diced apples.

Fill a skillet halfway with oil; heat over medium heat until oil reaches 375 degrees with a candy thermometer or an instant read thermometer.

Drop 1/4 c. batter at a time into oil; let fry until golden brown. The batter will feel thin, but it'll come together. Flip over; fry second side until golden brown. They're done when a small knife inserted into the center comes out clean. If not, fry a little longer.

Use a large slotted spoon to transfer to a paper towel-lined cooling rack; let cool. Repeat with remaining batter.

Glaze:
In a small bowl, stir together powdered sugar, vanilla and 3 t. water. Stir in more water, 1 t. at a time, until a pourable consistency is reached.

Drizzle glaze over the cooled fritters; allow to dry.
