Ingredients

16 oz. whole milk ricotta cheese, drained overnight
10 sugar cones
3/4 c. semi-sweet chocolate chips, melted for dipping cones
1/2 - 2/3 c. powdered sugar
1/2 t. vanilla extract
2/3 c. mini-chocolate chips

Place a large mesh strainer on top of a mixing bowl; lay a few paper towels in the strainer; place ricotta in the strainer; drain ricotta overnight in the refrigerator.

To dip cones in melted chocolate, melt the semi-sweet chocolate chips in the microwave; dip cones; place cones in a glass or on wax paper to dry.

In a large mixing bowl, beat together drained ricotta, powdered sugar and vanilla until well combined; stir in chocolate chips. Use a piping bag or spoon the mixture into each cone.

These cones are best served on the same day. Draining the ricotta helps to keep the cones from getting soggy, they can still get a bit soggy.

If wanting to prepare in advance, make the filling the night before and then fill the cones the same day you plan to serve them.

*Tip: Melt some extra chocolate and line the insides of the sugar cones with melted chocolate, if desired. It might prevent the cones from getting soggy and makes them even more decadent.
