This easy to make dessert is made with only 4 ingredients. It takes about 18 minutes to prepare but the difficult part is waiting for it to cool. It's a decadent, smooth chocolate pie with a perfect shortbread crust.
12 oz. semi-sweet chocolate chips
1 1/2 c. heavy whipping cream
1/4 c. sifted powdered sugar
1 T. vanilla extract
9 inch prepared shortbread pie crust
whipped cream for top of pie and crushed shortbread cookies for sprinkling, optional
Crust:
2c. finely crushed shortbread cookies (Walkers, if possible)
1/4 c. melted butter
Crust:
Mix together crust ingredients well and press into the 9 inch pie dish and chill.
In a microwavable dish, combine chocolate chips and 3/4 c. heavy cream; microwave on High for 1-2 minutes, stirring every 30 seconds until smooth. Let cool to room temperature. Stir in sugar and vanilla; set aside.
In a stand mixer, beat remaining heavy cream until soft peaks form, 3-5 minutes. Remove bowl from stand mixer; fold in chocolate mixture, 1/3 at a time; carefully spoon into the prepared crust.
Refrigerate for at least 8 hours.
Serve with whipped cream and crushed shortbread cookies sprinkled on top.
