Ginger lovers, you will absolutely love this salad dressing. It's full of wonderful flavors that go with many salads and fresh fruit like apples and pears. It takes just minutes to make and keeps in the fridge for about 10 days.

Ingredients

½ c. extra-virgin olive oil
2 T. apple cider vinegar, to taste
2 T. Dijon mustard, at room temperature
1 T. honey or maple syrup, to taste
2 t. finely grated fresh ginger
½ t. fine sea salt
about 20 grinds of freshly ground black pepper

In a small bowl, whisk together all ingredients until fully blended. If mustard is cold, it might need a few minutes to warm up before it fully incorporates.

Taste and adjust ingredients as necessary. For more tartness, add a teaspoon of apple cider vinegar, or for more sweetness, add a teaspoon or two of honey or maple syrup.

Makes 3/4 cup.

*The dressing keeps well in the refrigerator for up to 10 days. Olive oil solidifies slightly when cold, so let it warm to room temperature for a few minutes or microwave it in a microwave-safe jar for no more than 15 - 30 seconds.
