These bars will be a hit every time you serve them. The cookie base is great and the filling has just a delicious lemon flavor.
Base:
2 c. all-purpose flour
1/2 c. powdered sugar
1 c. butter, softened
Filling:
4 eggs
2 c. granulated sugar
1/4 c. all-purpose flour
1 t. baking powder
1/4 c. freshly squeezed lemon juice*
Glaze:
1 c. powdered sugar
2 - 3 T. freshly squeezed lemon juice*
Preheat oven to 350 degrees.
Base:
In a large bowl, use an electric mixer on low speed to beat base ingredients until crumbly. Press mixture evenly in bottom of an un-greased 13 x 9 inch pan. Bake 20 - 30 minutes or until light golden brown.
Filling:
Meanwhile, in large bowl, use a wire whisk to lightly beat eggs; beat in remaining filling ingredients except for the lemon juice until well blended; beat in 1/4 c. lemon juice.
Remove partially baked base from oven. Pour filling evenly over warm base.
Return to oven; bake 25 - 30 minutes longer or until top is light golden brown. Cool completely, about 1 hour.
In a small bowl, mix powdered sugar and enough lemon juice for desired spreading consistency until smooth. Spread glaze over cooled bars.
Cut into bars. Serve.

* 1 lemon yields about 3 T of juice, so buy 2-3 lemons to make these bars.
