Bruschetta is an appetizer that doesn't always have to be topped with fresh tomato. It can be topped with many things and peaches are a delicious way to enjoy it. It's an easy appetizer or snack to make using your indoor or outdoor grill.
1 loaf bread (artisan bread, sourdough or French bread)
olive oil, for drizzling
8 oz. container burrata cheese (or soft goat cheese, ricotta or slices of fresh mozzarella)
4 oz. container prosciutto
3 large peaches, thinly sliced
honey or balsamic, for drizzling
coarse Himalayan sea salt or flake salt
fresh herb, like rosemary, arugula or basil, optional
Preheat oven, grill or grill pan to 400 degrees.
Use French bread for small bites of bruschetta, or artisan or sourdough for larger pieces. Slice bread into 1/2 inch thick slices; drizzle or brush olive oil onto bread; toast or grill bread until crisp on the outside but still slightly soft.
Tear burrata cheese; spread on toasted bread. Place a small piece of prosciutto on top of each piece of toast; top with sliced peaches. Drizzle bruschetta with honey; sprinkle with salt; garnish with arugula or basil, if desired.
Store leftover bruschetta in an airtight container in the refrigerator.
6-8 servings.
