Make your own fresh French spice Beau Monde seasoning at home with spices that you probably already have in your pantry. Use it in hamburgers, soups, stews, casseroles, ground beef, turkey or chicken, or to season grilled meat and chicken.
1 T. ground cloves
1 t. onion powder
1 T. salt
1 T. ground bay leaf
1 T. ground allspice
1 T. ground pepper
1 t. ground white pepper
1 t. ground nutmeg
1 t. ground mace
1 t. ground celery seed
Start with fresh spices. Fresh ones will smell strong. Use a spice or coffee grinder to grind the spices. Pulse it like a blender or a food processor. The bay leaf must be ground to a powder because the leaf has a sharp spine that can cause injury if swallowed. The celery seed can also be ground to a powder. To clean the grinder, run some bread cubes through it to pick up any left over bits. Use these seasoned bread crumbs as you would any bread crumbs.
In a small bowl, combine cloves, onion powder, salt, ground bay leaf, allspice, pepper, white pepper nutmeg, mace and celery seed. Stir until it looks close to one color. Pour into a jar with a tight-fitting lid and store in a cool, dry place up to 6 months.
