Caramel Filled Ritz Turtle Cookies

These cookies are just in time for the holidays. They make an excellent hostess gift to bring to a party, a dessert for a gathering or a snack just because. They have the perfect combination of sweet and salty.

Ingredients

12 caramel candies, unwrapped
2 t. heavy whipping cream
22 Ritz crackers
4 squares chocolate almond bark
1/3 c. chopped pecans
whole pecans
sea salt

Place caramel candies and whipping cream in a microwave safe bowl; microwave for 30 seconds; stir; microwave for another 15 seconds; stir; continue to heat and stir at 15 second intervals until smooth, watching carefully so that the sauce doesn’t boil over or burn.

Allow sauce to cool and thicken, at room temperature, for about 8-10 minutes, stirring often to keep it smooth.

Plop 1 t. caramel sauce in the center of each of 11 Ritz crackers. Top each cracker with another cracker; squish caramel so that it spreads out. Place caramel sandwiches in the refrigerator for 1 hour so that the caramel will harden.

Melt chocolate almond bark in a microwave safe bowl in the microwave. Dip the caramel sandwich cookies in the chocolate almond bark, placing them on a silicone mat or a piece of parchment paper. Sprinkle with chopped pecans or place a whole pecan on the tops of each cookie. Sprinkle each cookie with sea salt.

Allow chocolate almond bark to set and harden at room temperature. Store in a sealed container in the refrigerator.
