These decadent peanut butter fingers are quick and easy to make. They're great to serve to a crowd who will absolutely love them. They taste a lot like Reese's Peanut Butter Cups.
1 c. butter, softened
1 1/2 c. packed brown sugar
1 c. sugar
2 1/2 c. creamy peanut butter, divided
1 large egg
1 1/2 t. vanilla extract
2 1/2 c. quick cooking oats
2 c. all-purpose flour
1 t. baking soda
1/2 t. salt
Chocolate Frosting:
6 T. butter, softened
4 c. powdered sugar
1/2 c. baking cocoa
1 t. vanilla extract
6 - 8 T. milk
Preheat oven to 350 degrees. Grease a 15x10x1 inch baking pan.
In a large bowl, cream butter and both sugars together until light and fluffy. Beat in 1 c. peanut butter, egg and vanilla.
In another bowl, combine oats, flour, baking soda and salt; gradually add to creamed mixture, beating well after each addition.
Spread into prepared baking pan. Bake 13-17 minutes or until golden brown. Cool slightly on a wire rack, about 12 minutes.
Spread on remaining peanut butter. Cool completely.
Frosting:
In a large bowl, beat butter, powdered sugar, cocoa, vanilla and just enough milk for spreading consistency. Spread over peanut butter. Cut into 36 pieces.
Makes 3 dozen bars.
