Don't like cauliflower? Think again. Maybe you just aren't cooking it the right way. Roasting it in the oven with flavorful spices makes it irresistible. It will be crispy on the outside and tender on the inside.
1 small (2 lb.) head cauliflower, cut into bite size pieces
3 T. light olive oil
1 t. garlic powder
1 t. smoked paprika
1/2 t. kosher salt
1/4 t. black pepper
squeeze of fresh lemon juice, optional
Preheat oven to 450 degrees. Place a rack in the upper middle section of the oven. Line a baking sheet with a Silpat mat or parchment paper; set aside.
In a small cup or bowl, combine oil and spices; stir to combine.
Place cauliflower in a large bowl; pour oil and spice mixture over it; toss to coat thoroughly.
Evenly spread cauliflower on prepared baking sheet. Place in the oven.
Roast for 15-20 minutes, until cauliflower is tender, slightly crisp and browned on edges. Remove from the oven.
Serve hot with freshly squeezed lemon juice over the top, if desired.
