¾ c. all-purpose flour
½ c. firmly packed light brown sugar
¼ c. granulated sugar
½ t. baking soda
¼ t. salt
¼ t. ground cinnamon
1 stick unsalted butter, melted
1 large egg, lightly beaten
½ t. vanilla extract
1 ½ c. old-fashioned rolled oats
½ c. dried cranberries
¾ c. white chocolate chips
Preheat oven to 350 degrees. Line baking sheets with parchment paper; set aside.
In a large bowl, whisk together flour, both sugars, baking soda, salt and cinnamon.
Add butter, egg and vanilla to the flour mixture, mixing until combined. Fold in oats, cranberries and white chocolate chips.
Drop dough by a tablespoon or a cookie scoop 3 inches apart onto prepared cookie sheets.
Bake until edges are golden, about 11-13 minutes.
Transfer to a wire rack to cool completely.
