This cake can easily be prepared last minute and baked in the microwave in the Deep Covered Baker. Serve warm with ice cream, if desired.
1 spice cake mix
16 oz. can pumpkin puree
3 eggs
canned cream cheese frosting
Mix all cake ingredients together; place in the Deep Covered Baker. Microwave on high for 13 minutes, UNCOVERED.
Let stand for several minutes; invert on platter.
Frost with canned cream cheese frosting.
