Ingredients

1 1/2 lb. sweet potatoes
1/3 c. diced green onions
1 egg
1/2 c. plain bread crumbs
1 T. minced fresh cilantro
2 T. sour cream
1 large garlic clove
salt and freshly ground black pepper, to taste
vegetable oil, for cooking

Baking Method:
Preheat oven to 350 degrees.

Wash potatoes; use a knife to poke several holes; wrap in aluminum foil. Bake until soft, time will depend on the size of the sweet potatoes. Smaller ones can significantly decrease the cooking time.

Once done, cool until easy to handle. Scoop out all the potato meat into a mixing bowl.

Boiling Method:
Wash, peel and cut potatoes into halves or in quarters, depending on the size. Add to salted boiling water; cook until a butter knife goes through easily. Drain; add to a mixing bowl.

Microwave Method:
Poke a few holes in the potatoes. 2 medium to large sweet potatoes should cook in 5-6 minutes in the microwave.

Sweet Potato Cakes:
Mash sweet potatoes in mixing bowl until smooth. Add green onions, cilantro, sour cream, egg, bread crumbs and grated garlic; mix. Add salt and pepper, to taste. Mix well.

Form patties from the mixture. Preheat a medium saute pan over medium heat; add vegetable oil.

Cook patties for about 5-7 minutes per side. Use a spatula to carefully flip.

Serve with with a dollop of sour cream, Greek yogurt or Ranch dressing on top, if desired.

10-12 servings.
